This is great Milli. Congrats again on a fabulous achievement. It's a good interview too. Basically the situation is that with the help of Big Food marketing and manipulation, such as calling shit food 'Happy Meals', we have veered radically away from knowing, or indeed caring, what food is for and how it affects our bodies, with women's bodies and brains being worse affected because what we eat (and weigh) affects our reproductive health and hormonal balance in a way that men aren't similarly affected. I still eat my processed muesli - with nuts and fruit added - but it is low-sugar, just 5%, and comes with a 5-star health rating. I don't like the taste of fresh oats, alas. However, the previous brand I ate for far too long did not list its sugar content, and I was too busy/lazy to work it out then, having young children and busy job. But working it out for my 2024 book on the numbers of the healthy ingredients that they did list, it came out at 18% sugar. 😮 I stopped eating it immediately. But yeah, it's all in the compromise between more boring and basic but healthy food, on the one hand, and the more processed stuff that generally tastes better and is easier to eat on the other. Feeding your older kids natural food is another major challenge, of course, with much processed food marketing targeted at kids. Perhaps Ultra Processed Kids might be next??
